I used to love egg salad sandwiches, especially packed up in paper for a summer picnic at the lake, so perfecting a vegan version was definitely an early priority. Whether you’re packing these up for a work lunch or bringing them to a playdate (sans crusts of course!) with some crudités and lemonade,  this easy and tasty version will be quickly devoured by both the adults and the kidlets.

Summer sandwich staple made very simple and delicious.

  1. 1 14oz. package organic, extra firm tofu
  2. 3 Tbsp vegan mayo (Just Mayo is the best!)
  3. 2 Tbsp fresh chives, minced
  4. 1 Tbsp dill, fresh or dried
  5. 1 tsp garlic powder
  6. 1/2 tsp paprika
  7. cracked pepper
  8. salt
  9. 8 slices sandwich bread
  1. Crumble tofu with your hands into a large bowl.
  2. Add mayo, chives, dill, garlic powder and paprika. Mix well.
  3. Add pepper and salt to taste.
  4. Spread eggless salad on bread, slice and serve.
