Go-To Cornbread

This is the only cornbread I ever make. It’s super easy and tasty so I don’t mess with it or ask questions. I usually end up making this when I feel like we just need something extra for dinner because I almost always have these ingredients in my pantry.

  1. 2 cups soy milk
  2. 2 tsp apple cider vinegar
  3. 3/4 cup ground cornmeal
  4. 3/4 cup corn flour (if you don’t have this you can use more cornmeal here-but it’s not as good!)
  5. 1 cup all-purpose flour(or half white whole wheat flour)
  6. 2 tsp baking soda
  7. 1 tsp fine grain salt
  8. 4 Tbsp organic sugar or date sugar(unrefined and lower glycemic index but it will alter the color a little)
  9. 1/3 cup canola oil
  1. Preheat oven to 400°F and lightly oil a 8-inch square pan or cast iron skillet.
  2. Mix milk and apple cider vinegar in a small bowl and let sit until it thickens.
  3. In a large bowl mix cornmeal, corn flour, flour, baking soda, salt and sugar.
  4. Combine oil with vinegar mixture and add wet mixture to the dry ingredients. Mix well.
  5. Pour into prepared baking pan and bake for 30-35 minutes or until a toothpick in the center comes out clean and edges are golden and pulling away from the pan.
