Homemade Burger Buns

Just a quick post for you guys. I’ve been making these buns for our burgers for awhile now. Fresh, hot buns really elevate our meals and are not much effort if you’re lucky enough to have a stand mixer to do the kneading. I don’t even bother buying packaged ones anymore. These soft, sweet buns are begging for a veggie burger, some pulled jackfruit or some gravy to be dipped in.

Homemade Burger Buns (Vegan)

Soft, sweet burger buns with no eggs or dairy.

Dough
  1. 1/4 cup lukewarm unsweetened almond milk (110 degrees F)
  2. 1 package of yeast
  3. 1 tbsp sugar
  4. 2 3/4 cups organic all-purpose flour
  5. 1/2 cup white whole wheat flour
  6. 2 tsp ground flax
  7. 2 tbsp sugar or maple syrup
  8. 1 tsp fine salt
  9. 2 tbsp canola oil
  10. 1 cup lukewarm water
Wash
  1. 2 tbsp vegan butter (earth balance)
  2. 1 tbsp almond milk
  3. sesame seeds (optional)
Instructions
  1. In a small bowl, combine warm milk, yeast and tablespoon of sugar. Mix well and let sit for 8-10 minutes or until very foamy. If this mixture doesn't foam, either your yeast is dead or the milk was too hot or cold.
  2. In stand mixer bowl fitted with dough hook attachment (or if mixing by hand, a large bowl), combine flour, whole wheat flour, ground flax, sugar or maple syrup, and salt. Give a little stir to combine dry ingredients.
  3. With mixer on 'stir', carefully add foamy yeast mixture, canola oil and only 1/2 cup of lukewarm water.
  4. Turn mixer a little higher and add last 1/2 cup just a little at a time until mixture is soft and doughy. You may not need to use it all.
  5. Allow mixer to knead dough for 5 minutes, OR turn dough out on lightly floured surface and hand knead for 5 minutes.
  6. Lightly oil a large bowl, add dough, turn to coat in oil, cover with a kitchen cloth and set someplace warm for 45 minutes.
  7. Turn risen dough out onto a lightly floured surface, knead for a few more minutes to get out air bubbles and divide dough into 12 equal size pieces. Roll into balls.
  8. Grease a baking sheet or cover with parchment paper and place rolls evenly with a little space between for them to rise again. Cover with a cloth and let rise again for 1 to 1 1/2 hours.
  9. Preheat oven to 425F.
  10. Once buns have risen, grab a small bowl and melt butter in microwave, and add milk. Using a pastry brush, liberally brush buns with butter mixture and sprinkle with sesame seeds. Save butter mixture.
  11. Bake buns for 12-15 minutes or until tops are golden. Brush once more(lightly) with butter mixture and enjoy!
